Billingsgate Seafood Training School

Billingsgate is a very popular fish market located near Canary Wharf. On Tuesday 30th December, Charlie Casey, a very successful retired fishmonger, and Paula Williams, the school’s co-ordinator came to visit the Evelina School. Charlie showed many different fish giving us facts about each one like where they lived in the sea and how they are caught. He showed us many different fish, such as the parrot fish, mackerel, and plaice. He also showed us how to fillet and skin a plaice and mackerel. One useful tip he told was that each and every fish in the sea has a faint line running across both sides of the fish’s body. They use it as ears. After showing us about six fish Paula came and demonstrated a quick recipe for fish fingers, using a fresh coley they’d brought from the market earlier that morning. Then she brought out some prawns and we all had a go at peeling them. We enjoyed ourselves and are very thankful to Paula and Charlie for taking time out for us!
